I have a confession: most days I’d rather have two burgers, large fries, and a milkshake than green salads (just don’t tell my kids 😉 ). No really, I love healthy, nutritious food, but I also love yummy, flavorful food. But I could happily eat this spring mix salad every day.
Especially since I went gluten free, I am always looking for easy, healthy lunch options that are also filling. And this is good enough to serve for company, too!
I first had something similar at a friend’s house almost 15 years ago, and I’ve been recreating, adapting, and tweaking it since then. Until it was perfect.
Spring Mix Salad
Fresh summer strawberries and peaches, thinly sliced avocado for good fats, candied pecans for a sweet crunch, feta for richness… it couldn’t be yummier. And I never go away hungry.
Many of these ingredients can be substituted with similar options for a little variation (or to accommodate what you have on hand!). Try candied walnuts instead of pecans, and crumbled goat cheese instead of feta. Sub other fresh berries, or even mandarin oranges if you don’t have fresh fruit on hand.
Baby spinach makes a good base, as well, if you don’t have mixed greens in your fridge. Top with all the same toppings and toss for a delicious spinach salad!
Sweet Balsamic Vinaigrette RECIPE
The best part about this salad is the dressing. I’ve always been a balsamic vinegar fan. My go-to dressing is just a little drizzle of high-quality balsamic, and sometimes I’ll dress it up by whisking in a drop of dijon mustard.
But this is the perfect dressing for a little treat. It’s sweet, light, and a little creamy… It also makes incredible Greek salads and pasta salads, just in case you were wondering. 😉
Mixed Greens Summer Salad
Mixed greens, fresh summer fruits, feta, candied nuts… all topped with a homemade balsamic vinaigrette dressing
Ingredients
Salad
- mixed greens
- strawberries sliced
- fresh peaches sliced
- avocado sliced
- feta crumbled
- pecans candied
Dressing
- 1/3 c olive oil extra virgin
- 1/3 c balsamic vinegar
- 1/4 c sour cream
- 1/2 tsp dried mustard
- 1/2 tsp salt
- 1 clove garlic minced
- 2 tbsp sugar
- 3 tbsp parsley fresh, chopped
Instructions

Whisk dressing ingredients together, then toss with salad.
