{Spinach} Ham and Cheese Quiche

Ingredients

  • 2 frozen deep dish pie crusts
  • 1 c chopped ham leftovers work great! I've even used lunch meat in a pinch.
  • 1 c chopped onions
  • 1 c chopped fresh baby spinach
  • 1 c milk (I prefer whole milk, but 2% will work, too)
  • 1 c grated cheddar cheese
  • 7 large eggs
  • salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Bake empty pie crusts 5 min.
  3. Combine the chopped ingredients (ham, onions, spinach) and place half of mixture in bottom of each pie crust.
  4. Stir eggs, milk, and cheese in a medium bowl and whisk to mix.

  5. Pour egg mixture over chopped ingredients, evenly dividing between the two pie crusts.

  6. Bake at 425°F for 15 min.
  7. Reduce oven to 300°F for 30 min.
  8. Remove from oven and allow to cool before slicing.

  9. Serve with fresh fruit, salad, or other brunch essentials.

Recipe Notes

I love to use leftover ham for this recipe. I have also subbed in bacon once or twice. Both options are delicious!
