Guilt Free Peppermint Truffles

These date-based peppermint truffles are gluten free and without any added sugar.  Rich, decadent, and delicious, these truffles are your perfect holiday treat!

  • 1/2 cup dark chocolate chips 70% cacao if possible
  • 1/2 cup roasted cashews (or almonds)
  • 16 oz pitted dates (approx 3-4 cups)
  • 2 tbsp cocoa
  • 2 tsp warm water
  • 1/4 tsp peppermint extract


  1. Dump your chocolate chips and nuts in your food processor and chop until until finely ground.  Set aside.

  2. Put dates, cocoa, water, and peppermint extract in food processor and process until paste like.

  3. Add the chocolate and nuts in with the date mixture and process until evenly mixed.

  4. Dust your hands with cocoa powder to keep the dough from sticking to them and roll 1" balls.

  5. Roll finished bites in cocoa to complete the look.
