Pesto Chicken Kabobs

Servings 4 -6 servings

Ingredients

For the Pesto:

  • 1 c fresh basil
  • 3 garlic cloves
  • 1/4 c fresh grated parmesan
  • 3 T olive oil

For the Kabobs:

  • 2 lb chicken breast
  • 1 large or 2 small zucchini
  • 1 large or 2 small yellow squash
  • salt and pepper to taste

Instructions

  1. Combine all ingredients for pesto in a blender or food processor.
  2. Cut chicken into 1" cubes.
  3. Coat chicken with pesto.
  4. Cut squash and zucchini in half lengthwise, then slice into 1" sections.
  5. Slide chicken and squash (alternating) onto kabob skewers. Be sure to pierce the squash through the skin to secure the skewer (if you only pierce the fleshy part, it may fall off when cooked).
  6. Serve with a side of rice or sweet potatoes for a complete and delicious meal!
