Sweet and Smoky Goat Cheese Pasta

A few weeks ago, my son requested spaghetti for lunch. Just. plain. spaghetti. “Like Curious George, mom!” Of course… what was I thinking?  Anyway, I wanted something more, so in the 10 minutes while the pasta was boiling, I threw together a few things I found and it. was. delicious.

Hearty, whole wheat pasta is complemented with sweet sauteed onion, smoky beef, and decadent goat cheese… all in less than 15 minutes.

Since then, I’ve made it for my family for dinner (I broiled some asparagus while the pasta was boiling and we had a wonderfully balanced meal!), and even my Curious-George fan agreed that it was better this way.

I started with a little olive oil, onion, and garlic in a skillet. And I sliced and added the rest of the dried beef I had leftover from the baked cream cheese dip. I like the slightly smoky flavor of the beef, but I imagine that any thinly sliced salami or prosciutto would work, too.

Saute the mixture while the pasta cooks, toss it all together, and then add the secret ingredient: goat cheese crumbles.

The warm pasta begins to melt the goat cheese, giving a decadent creaminess to the light and savory dish. I know your family will in enjoy it, and best of all, it truly can be done within the 10 minutes that your pasta cooks. My kind of meal!

Sweet and Smoky Goat Cheese Pasta

Servings 4 -6 servings

Ingredients

  • 16 oz whole wheat spaghetti
  • olive oil
  • 1 large sweet yellow onion
  • 2 cloves of garlic or ~1 t refrigerate minced garlic
  • 1 jar ~2 oz dried beef (sometimes labeled chipped beef - found near canned meats at the store)
  • goat cheese crumbles

Instructions

  1. Prepare pasta according to package directions.
  2. While pasta cooks, chop your onion and garlic and saute in olive oil over medium high heat.
  3. Once onion is translucent, slice your dried beef and add it to the skillet.
  4. Saute onion, garlic, and beef until pasta is ready (the sweet onion should almost caramelize).
  5. Toss mixture with pasta (add a little olive oil to your pasta, if desired).
  6. Top each serving with the desired amount of goat cheese crumbles.
