Slow Cooker Mexican Chicken with Cilantro Lime Couscous

How’s that for the longest blog post title ever? I couldn’t leave anything out, though. The sweet and cheesy Mexican chicken simmers all day to a delicious medley of flavors, and the fluffy couscous with a hint of cilantro and a boost of lime makes the perfect base for the chicken. Even better, the slow cooker makes this a super easy meal – perfect for feeding family and friends! It’s been a while since I’ve shared a good ol’ family friendly recipe, but as the spring gets busier and busier, I think we could all use something easy and delicious, am I right?

This Mexican chicken is actually a fabulously versatile dish: frozen chicken breasts, salsa, corn, and black beans in the crock pot in the morning… And delicious filling or topping for tacos, quesadillas, rice, salad, and more is ready to go by dinner time. Toss in a bag of Sargento Mexican cheese and it becomes a creamy delight.

This time, though, I put it over couscous. I love couscous (because it’s delicious and) because it only takes five minutes to make. So ten minutes before dinner time, I put water on to boil, stir the chicken mixture until the chicken is shredded, and toss cheese in the crock pot. By that time, the water is boiling, so the couscous goes in. In 5 minutes, toss in some lime juice and cilantro, top with chicken, and serve.

Slow Cooker Mexican Chicken with Cilantro Lime Couscous

Servings 4 -6 servings

Ingredients

  • 8 frozen boneless skinless chicken tenders
  • 1 15 oz can black beans, rinsed and drained
  • 1 1/2 cups frozen corn
  • 8 oz your favorite salsa or pico de gallo
  • 6 oz Sargento fine cut 4 cheese Mexican plus more for topping
  • 1 box couscous
  • juice of 1 lime
  • 2 T chopped cilantro

Instructions

  1. Place chicken, beans, corn, and salsa in slow cooker. Cook on low for 6-8 hours.
  2. Cook couscous according to directions on box. Add lime and cilantro and fluff with fork.
  3. Top warm couscous with chicken mixture, add a little more cheese and any other desired toppings (pico, sour cream, avocado) and serve.
