Swirled Sweet and Golden Mashed Potatoes

Ingredients

  • 1 lb sweet potatoes peeled
  • 1/4 c 2 oz cream cheese
  • 1/4 t salt
  • 1/2 t oregano
  • 1 lb golden potatoes or other white potatoes, peeled or unpeeled
  • 1/4 c sour cream
  • 1/4 t salt
  • 1/4 t minced garlic fresh or refrigerated
  • fresh rosemary

Instructions

  1. Cut potatoes into chunks.
  2. Boil potatoes.
  3. Add cream cheese, 1/4 t salt, and oregano to sweet potatoes. Mash.
  4. Add sour cream, 1/4 t salt, and garlic to golden potatoes. Mash.
  5. Spray baking dish with non-stick spray.
  6. Spoon or pour sweet and golden potatoes into alternating rows in baking dish.
  7. Use knife to swirl the potatoes.
  8. Top with fresh rosemary.
  9. Bake at 350° for 25-30 minutes.
  10. Top with more fresh rosemary and serve hot.

Recipe Notes

Time (and dish!) saving tip: cut your potatoes into LARGE chunks (2" square) and boil all potatoes together. They will be easy to sort into separate bowls to mash if the chunks are large.
