Tomato Basil Couscous
Tomato basil couscous: whole grain couscous with fresh spinach, basil, and cherry tomatoes.
There’s nothing better than delicious food… am I right? Unless, of course, that mouth-watering, savory goodness has amazing memories. And if it’s good for you, too? Well, my friends, then you’ve hit a home run. And that’s exactly what this delicious, 10 minute (seriously!) tomato basil couscous is: healthy meets delicious with a dose of quick and easy. Win.
This dish always reminds me of our time in Paris. We lived there for two years, and that was my first introduction to couscous (because, little did I know, the connections between France and North Africa mean that couscous is almost as prevalent as crepes these days). And since the markets there are packed full of fresh fruits and vegetables, I couldn’t resist finding a way to use fresh veggies and cheeses alongside my couscous.
Now I have a disclaimer: I do not really use a recipe for this. It’s really a “handful” and “pinch” and “whatever-amount-I-happen-to-have-in-the-fridge” sort of approach. But it’s delicious every time.
Originally, I made it with fresh tomatoes, basil, feta, and rotisserie chicken from the market. Then I began sneaking in some spinach, and from time to time I even used dried basil. Whatever the specifics, the combination is delicious, and the whole thing takes no more than 10 minutes. You cook the couscous, chop the ingredients, and mix it all together, right there in the couscous pot.
I use a whole wheat couscous (my store carries a “roasted garlic and olive oil” whole wheat variety that’s ready in 7 minutes).
With that, this recipe boasts whole grains, fresh vegetables, protein… everything you and your family needs for a well-balanced meal. The only thing faster than making this meal is how quickly my family devours it!
That leaves more time for trips to DIY conferences, attic renovations, laundry room makeovers, nursery decorating, and – most importantly – my loved ones. That, of course, is the real prize. 😉
Tomato Basil Couscous
Ingredients
- 1 box garlic and olive oil* whole wheat couscous
- 4 cooked chicken breasts or 1 rotisserie chicken
- 1-2 cup cherry tomatoes
- 1-2 cup packed spinach
- 1/4 cup fresh basil or 4 teaspoons dried basil
- 1/2 cup feta cheese
- **Obviously these "measurements" are very rough - proportion to your liking!
Instructions

Cook couscous according to package directions.

*If you cannot find "garlic and olive oil" couscous, chop one clove of garlic and throw it into the boiling water when you add the couscous.

Chop your chicken, tomatoes, spinach, basil, and feta.

Combine all ingredients and serve warm... or room temperature... or even cold. It's delicious at any temperature!
