Deliciously seasoned sweet and golden mashed potatoes. Swirled. Baked. You’ll never make two separate dishes again!
I have three brothers. Translation: I can take care of myself.
I jest (*sort of*), but having three brothers (and now two boys of my own) has given me a serious appreciation for a good, solid side. You know, a “meat and potatoes” sort of side.
Since we’re talking about the effect of having three brothers, I must say that my cousin (the closest thing I’ve ever had to a sister – she has three brothers, too!) is one of God’s true gifts to me.
Now don’t get me wrong, I LOVE my brothers. And I love being the princess (no lie!), but I also appreciate the camaraderie that comes from my relationship with my cousin.
And one of the things we love to do together is cook. This is one of those things she suggested years ago (I don’t even remember where she got the idea!), but I have enjoyed variations of it ever since.
And today, I want to share it with you. With hearty sweet and golden potatoes, rich herbs, some sour cream and cream cheese (hearty, remember?), this dish will satisfy just about everyone I know. And it’s pretty enough for Thanksgiving yet easy enough for next Tuesday night.
